Las Pareditas, the site of Zaha’s vineyards, is at a high altitude and cool microclimate located approximately 60 miles south of Mendoza. The region is rapidly becoming synonymous with world-class wines. The soils are unique and diverse, boasting a cold climate at 3,300 – 4,000 feet elevation with erosion-produced sandy, rocky, silty and limestone soils dispersed throughout. This wine is crafted using whole clusters in an oxidative press with no SO2 added. Cold decantation is used to remove all oxidates phenols and then the clean juice is racked to a tank for natural yeast fermentation. There is no malolactic fermentation and 10% of base wine is aged in used French oak barrels. Bottles are topped off with the same wine, making this sparkling wine a “Blanc de Blancs Nature Método Champenoise Sparkling.”
