NV Biutiful, Cava DO, Rose (RT89) This classic Brut Cava is crafted using the traditional Méthode Champenoise which creates a wine of traditional profile. This bottling receives a dosage of 8 grams/liter. A fresh, lightly copper-tinged terra cotta hue leads to a bouquet built on dried red raspberry, strawberry liqueur and chalk dust. The palate is fresh and juicy, relatively straightforward but amply yummy with soft acidity and a medium finish. Terrific authentic that remains highly affordable in today’s increasingly spendy market. Drink now Tasted November 2025          

The Biutiful Cavas are created by a unique collaboration between Isaac Fernández Montaña, one of Spain’s widely heralded winemakers, and Aurelio Cabestrero, a genius marketeer who has helped bring Spanish wines to the forefront in the United States. This Rose is crafted from 40-50 years-old, 100% Garnacha grown in calcareous clay and limestone soils at 300-400 meters elevation. Grapes for this bottling are hand harvested and transported to the winery in tiny boxes to preserve the individual grapes, ensuring they arrive intact. Lightly pressed and fermented in temperature controlled stainless tanks, the wine is aged in stainless for one year and further aged on lees for up to 18 months prior to disgorgement.
