2021 Cellar Cairats, Montsant DO, Origen (RT92) This impressive blend of 55% Grenache, 24% Carignan and 21% Tempranillo is crafted in an Old World, expressive style, with ample conveyance of its terroir. Deeply ripe aromas of Carignan and Tempranillo dominate the aromatics with notes of blackberries, ripe plums, brambles and hints of smoky game, the Grenache appearing to add textural experience, but little more. The palate is restrained delivering precisely dosed old world elegance, the acidity and tannins blending into the overall picture beautifully. This wine is a classic expression of Spain that leans to an Old World style and presents quite a fine value. In 2010, Ramon Masip and his Family discovered some old vine plantings of native varieties in Montsant and started his modern winery: Cellar Cairats. Today this winery is certified organic and includes two small properties totaling 12.3 acres of 40-60 year old vines growing on soils of loam, clay, sand, limestone and calcareous soils and are located in the Pins Vens and Les Vinyetes areas. 10-15% of this wine is aged in 2nd and 3rd passage French oak for 12 months, the balance aged on lees in stainless for 8 months to preserve its freshness, followed by 12 months in bottle prior to release. A total of 11,000 bottles of Origen were produced. This wine is clarified with potato protein and bentonite making it Vegan friendly and is bottled in sync with the phases of the moon, making it semi-biodynamic. They age their wines in stainless steel, French oak barrels of various ages and terracotta amphorae.
