2022 Duca di Salaparuta, Etna Bianco, Lavico (RT92) This bottling of 100% Carricante delivers a generous aromatic display of lemon zest, crisp golden apple, jasmine, white melon rind and wisps of salty sea mist. The mouth texture is rich and amply ripe with a slightly oily, coating feel. This is a medium weight Bianco that is super food friendly and pairs well with light pasta and seafood dishes. This pure Carricante bottling comes from the northeastern slopes of Mount Etna, where the young vines are situated on the Vajasindi Estate. The elevation here is 600-800 meters, and the wines are grown using the Guyot training system, in contrast to most of the older vines grown on the slopes of Mount Etna that are bush vines. Soils are 100% volcanic. The grapes are hand harvested, destemmed and fermented and aged in stainless tanks using only indigenous yeasts. This is an early drinking Carricante, not meant to be laid down, so enjoy it now!
